These baked honey mustard chicken thighs recipe is one of those no brainers that you can make with all the ingredients in your fridge! I came up with it on a whim when I had nothing else in the fridge except defrosted chicken thighs and my Restaurant Style Honey Mustard Dressing.
This is as it turns out the dressing of all dressings. Ā I have used it as a dip for my Crunchy Baked Chicken TendersĀ and that ALWAYS got rave reviews!Ā
And because there are so many uses for this dressing as a marinade, dip, sandwich spread and dressing, I always have a nice jar of it hanging out in the fridge just waiting to be used up!
Enter these glorious baked honey mustard chicken thighs! Ā From beginning to end I had a gorgeous dinner on the table in 30 minutes! Ā When dinner can get on the table in so little time…there is no reason to ever get takeout!
Now let’s talk about the flavor in this chicken shall we? Ā This honey mustard dressing transforms the chicken while it bakes! Ā It becomes a sticky, gooey glaze on top of the baked chicken and simultaneously all the sugars caramelize and make it all deliciously sweet!
THE TECHNIQUE
- Bone-In: When you use chicken that is bone-in, you not only retain a great deal of flavor but you also increase the chances of juicy and tender chicken without over cooking Ā it. Ā The bones may increase the cooking time, in this case by 10 minutes, but he flavor and the juiciness of the chicken is well worth the wait.
- The Crispy Skin:Ā Ā The best part about this baked honey mustard chicken of course is the crispy skin. Ā Because we bake (or roast) the chicken at such a high temperature the skin gets a chance to develop a crispy skin while still staying moist and tender on the inside.
- Roasting: I roasted this baby on a sheet pan in my incredible little Breville OvenĀ Ā because it was just for our little family of 3. Ā However when I made this for my friends and family, I used my large pan and just placed it rightĀ in my largerĀ oven for a super delicious and glazed result.
- The Glaze:Ā Ā After the chicken bakes for about 15 minutes and the gorgeous skin has crisped up, you baste it with the honey mustard dressing until a meat thermometerĀ Ā reads 160 degrees F or until the juices coming out of the chicken thighs come out clear. Ā The glaze can then be used to continue basting even after while it stands and cools.
- The Resting Period: Like any other meat or chicken that is roasted or baked, these baked honey mustard chicken thighs need to rest for 5 minutes after coming out of the oven so that it finishes cooking and so that it allows all the juices to work their way out of the middle of the chicken and to be evenly dispersed throughout the chicken. Ā When anything roasts or bakes, the high heat forces all the juices to go into the center and if you do NOT wait for the chicken to rest then all the juices will just come right out of the center leaving the rest of the chicken dry. Ā Which is never a good look for any chicken but especially our baked honey mustard chicken thighs.
While my chicken baked up, I very quickly whipped up some of my Honey Soy Glazed Green BeansĀ on the stove top for a delicious and healthy side dish. Ā I have also added some green beans and some cauliflower into the pan with the baked honey mustard chicken during the last 5 minutes of cooking. Ā So in a mere 30 minutes you will have a wholesome and perfectly balanced meal on the table for the family to enjoy together!

What times and temps would I use if I were doing this in a Breville oven with three chicken thighs?
I would still keep the same time and temp! Enjoy!

how long after the 15min baste is it cooked to get to 160
It all depends on your oven and your heat.
