Hazelnut and Chocolate Truffles

A luxurious mix of chocolate and homemade hazelnut butter makes for the most heavenly bites! Ā Made out of a homemade hazelnut butter. aka Nutella these are just the ultimate bite! Ā Covered in chocolate, nuts or cocoa these are the perfect treat for any day!

Every year at around this time, I sit at my laptop and ponder what I am going to bring to my holiday parties to blow everyone away.Ā  Each year I come up with some complicated, over the moon recipe and I spend days perfecting it.Ā  Only to have it be served to some rather inebriated guests who at this point would consider anĀ Oreo a delicacy.

So this year I somehow stumbled upon my recipe of choice completely on accident.Ā  A few years ago, I brought over some homemade chocolate truffles to a New Year’s Eve party along with 2 cakes, some moon pies and a few cupcakes.Ā  Needless to say, those truffles were never eaten and therefore wasted.Ā  So this yearĀ I decided to recreate these delicious truffles, except with one simple addition: vegan hazelnut Nutella.

Basically itĀ is my version of homemade vegan Nutella.Ā  Except, if you can imagine, it tastes even better than Nutella.Ā  This creation actuallyĀ was born out of laziness and necessity.Ā  I had just come back from the store in the middle of a very snowyĀ day, whenĀ I realized IĀ had no more nutella left.Ā  It was an impossibility for me to run out to the store, because my exhausted 1 year old had already been 30 minutes intoĀ her well deserved nap.Ā  So I managed to find someĀ hazelnuts in myĀ pantry and decided to give this whole nut butter thing a shot. Ā My Ā vegan nutella is a simple blend of roasted hazelnuts, some sugar, almond milkĀ and vegan cocoa powder.Ā  It is then whizzedĀ away in my trusty Vitamix and a few spins of the sharp blade later, I had creamy and velvety hazelnut butter.Ā  One taste and I knew my laziness was actually a blessing in disguise.Ā  The roasted hazelnuts gave a much deeper and richer flavor to the butter. Ā Nutella meet your vegan match. Perfectly roasted hazelnuts are combined with high quality cocoa to create the ultimate chocolaty vegan Nutella. The best part about this recipe is that it is truly simple.Ā  The vegan nutella is combined with meltedĀ bittersweet chocolate and cream cheese.Ā Ā A fewĀ tossesĀ in someĀ toppings in the end – truffles are done.Ā  And you canĀ bet that these truffles will not be left sittingĀ alone atĀ some sadĀ buffet table.

Melt your chocolate. Ā Once chocolate has melted, add hazelnut butter to the chocolate and melt for about 30 seconds more so everything is nicely combined.

In the meantime start beating your cream cheese with a stand or hand mixer so it gets nice and fluffy. Ā  Add the chocolate mixture to the cream cheese and beat just until combined. Ā Feel free to lick the paddle…I did.

Home made Nutella Truffles-003Lay mixture out on a sheet pan and refrigerate for two hours. Ā Any less and it will be too soft. Ā Any more and it will be too hard.Home made Nutella Truffles-003Use a spoon or a melon baller to get tablespoon size pieces of the chocolate mixture. Ā Roll them into balls. Ā Feel free to dip into Ā your favorite toppings like cocoa.Home made Nutella Truffles-003Or nuts.Home made Nutella Truffles-005Or dip them into some chocolate. Ā I happened to have some chocolate melts laying around so I decided to dip them. Ā The process does not look pretty…But I learned my lesson. Ā You gotta work fast with hot chocolate melts…

Home made Nutella Truffles-003Or you can make fun looking swirls on your truffles by taking your candy melts or your ganache and making a make shift pastry bag out of a zip lock bag. Just snip the tip in one of the edges and you are good!Ā Home made Nutella Truffles-003

Chocolate and Hazelnut Truffles

Ingredients

Scale
  • 8 oz bittersweet chocolate
  • 8 oz cream cheese
  • 1 cup of my vegan Nutella or Nutella

Instructions

  1. Melt chocolate in the microwave or double broiler. If using the microwave, melt the chocolate in 30 second increments, ensuring to mix the chocolate every 30 seconds to prevent it from burning.
  2. In the meantime, whip cream cheese on high in a mixer so it is nice and fluffy.
  3. Add melted chocolate and hazlenut butter to cream cheese and mix until well combined.
  4. Spread onto a baking sheet and refridgerate for two hours.
  5. Using a spoon or small ice cream scoop, gather the chocolate mix and roll in your hands to create a small ball.
  6. Dip in crushed nuts, cocoa powder, melted chocolate or sprinkles.
  7. Place into freezer and remove an hour before service.

Notes

To make this vegan, simply opt out the cream cheese for Kite Hill’s vegan cream cheese. They have my favorite!

  4. These look like they came straight from the chocolate shop! Great idea with the hazelnut butter. Will have to earmark for when I get that next chocolate craving (which is pretty much guaranteed at least a few times a week;)
