This incredible crock pot spinach and artichoke dip features 2 different dips in one crockpot with zero mess. Ā With the aid of my simple trick, you can turn oneĀ crockpot into 2 and make 2 completely different dips! Ā I made things superĀ simple by using La Terra Fina Artichoke DipsĀ and had a buffalo chicken dip and a garlic spinach artichoke dip done in 90 minutes without dirtying up any dishes.

I just realized Christmas is in a week. Ā ONE WEEK yo. Ā And I still have entirely too much to do. Ā In addition to that, my husband and I were invited to an awesome Christmas Day party and I am put in charge of appetizers.
“Bring a few dips,” my friend told me. Ā DIPS…plural. Ā I have spoiled all my friends so much by constantly cooking up loads of deliciousness that now they expect … well…loads of different delciousness.
Typically I would be overjoyed with the opportunity to bring over some goodies and have everyone oooh and ahhh over them. Ā But I am so tired.
Have you ever been so exhausted that you find yourself staring at 3 baskets of laundry that have been beautifully folded for 2 weeks…with no plans to be put back in their drawers.
I have been cooking and writing and photographing and writing and cooking. Ā It’s a cycle that never seems to end and there is nothing else that I would rather be doing. Ā But the laundry… something has to be done with the laundry. Ā In fact if there is such a thing as a laundry assistant (LA) please call me. Ā I would be inquiring for your assistance immediately.
So last weekend instead of putting away all that laundry, I decided to do the ultimate distraction and recipe test…because that’s what I do.
I looked at the stack of dishes that my hubs promised he would wash for me and I suddenly realized that my recipe experiment needed to use as little dishes as possible.
My crockpot was calling my name. Ā And as I took it out from that cabinet above my microwave that holds things rarely used, a box flew out and landed straight on my head.
“What the?” Several profanities later, I noticed that the mystery box was none other than crockpot liners that I bought years ago that still lay unopened. Ā And there lay my answer to the ultimate mess freeĀ dip.
I had a few different La Terra Fina dips laying aroundĀ and figured it was the ultimate starter to a quick and mess free appetizer.
The Technique
Because I had so many of the dips, I needed to figure out how to use them all up without creating extra work for myself. Ā I used an incredible technique for making two different dips in one crock pot by MacGyvering up a pretty neat trick.
- I took some foil and created a divider in my crockpot so that I could make 2 different dips all at once.
- I used just a few layers of foil to make the “divider” stand up. Ā It does not need to make be perfect or pretty for that matter. Ā Just functional.
- Once the divider is in place, just place the crockpot linersĀ Ā right over that and layer in your ingredients. Ā I went with a super garlicky Italian style Parmesan Garlic Spinach Dip and with a Spicy Buffalo Chicken Spinach Dip.
- Layer in all the ingredients with the Spinach and Artichoke Dip first and then add in all the herbs and seasonings.
- Put a lid on it and let it cook on low for 60 minutes. Ā At this point add in the cheeses to create a glorious cheesy dip.
A total of 90 minutes and zero mess later I had two completely different dips ready with no dishes to wash.
I decided to test this method out and gave a crockpot to the hubs full of these dips all prepped and just needing to be plugged in at the office.
I had rave reviews from all his coworkers (as if anyone ever doubted this) Ā but most importantly I had solved my problem for dips for my Christmas Day party! Ā Winning!
Now if someone could help me with my epic laundry problem, that would be great.
