Salted Caramel Stuffed Nutella Cookies
Super fudgy Nutella cookies stuffed with salted caramel and baked until gooey and warm inside. It’s the ultimate bite of sweet and salty!
Yea…guys these are amazing. I mean really. Nutella and caramel inside of a fudgy chocolate cookie and softly dusted with salt. It’s a dream inside your mouth.
I saw this cookie on this absolutely gorgeously amazing blog, Top With Cinnamon. Izy is so cute and creative, her blog has become one of my favorite go to’s! Not to mention she has a killa’ British accent that makes listening to her that much more awesome! Plus she has this cute video of how she made them but better yet she details how she made the video of them being made! It will all go make much more sense when you go look 🙂
But I digress…back to the cookie business.
They are perfect. I made a double batch and I brought them into work…they were gone in minutes! MINUTES GUYS! I made them warm them up for 15 seconds in the microwave and suddenly there were 50 people all walking around with gooey caramel and Nutella drippings on their lips, shoes and shirts. It gets messy sometimes, but wow is it worth it. They continued to come up to me with their chocolate stained fingers and wild eyes asking for more. I had to tell them the unfortunate news that they were indeed all gone. Sadness ensued.
I whipped these up last Sunday morning while the munchkin napped. The whole house smelled like chocolaty goodness. And I found myself huddled on the floor nibbling away at a chocolate cookie…mumbling “My precious” as chocolate crumbs spattered out of my mouth. No really I was on the floor, trying to get the perfect picture of melty cookie innards and I just happened to sneak away a cookie or 6…
Truth be told, other than the flavor, the very best part about this recipe is how easy it is! And the fact that you need one pot to make it. No mixing bowl, no kneading. A wooden spoon, a pot and a baking sheet and you are good to go.
First thing is first, line a baking tray with parchment paper. Preheat your oven to 350 degrees F.
The cookies start out with some butter in a pot melting away on the stove.
Having removed it from the heat, stir in your brown sugar and eggs with a wooden spoon.
Then add the cocoa, salt and baking powder. Stir to combine.
Add flour and stir until thoroughly combined.
Add chocolate chips and stir just until incorporated. You can use half white chocolate chips if you do not want it too chocolaty. Unless you do…which is perfectly fine.
Take one tablespoon of cookie dough and place onto the baking sheet. Make an indent right in the middle of it with your finger.
Place about 1/2 a tsp of Nutella in the indentation and then add a candy caramel. You can also use chocolate covered caramel candies like rolos or something or you can make your own caramel. But this was what I had so for cost and time purposes I used this. And they were still fabulous.
Take another tablespoon of dough and flatten it in your hands then place on top of the cookie to cover the chocolatey Nutella caramels. Sprinkle with some flaky salt.
Bake for 8-10 minutes. Let stand for 5 minutes and move to a cooling rack.
Then enjoy the ooeyness. I know I did.
