How to Make Cheesy Roasted Garlic Spaghetti Squash

  1. Preheat the oven to 450 degrees F. 
  2. Wash the raw squash and place it onto a baking sheet lined with parchment paper or in an aluminum foil pan for easy clean up.
  3. Poke holes in the squash with a fork or a knife. Just a few holes per squash will do. 
  4. Drizzle a little olive oil on the outside of the squash.1-2 tablespoons will do.
  5. Place the squash into the preheated oven and roast for 20-25 minutes until the squash is nicely brown and very soft to the touch. (see note 3)
  6. Once the squash is ready, set it aside and allow it to cool for 10 minutes or until it can be handled.
  7. Cut squash in half length-wise using a cutting board and a sharp knife. First, take off the top and ends of each squash and then slice it in half length-wise from top to bottom. It should look like two yellow spaghetti squash boats 🙂 
  8. With a spoon, scrape out the seeds of the spaghetti squash. 
  9. Once the inside of the squash is cleaned, take a fork and start scraping against the long strands until you have turned the whole boat into strands of spaghetti. Make sure to leave a little bit of squash at the bottom so it does not collapse. 
  10. Season with salt and pepper, red pepper flakes, and lemon zest (as much or as little as you like). Combine everything together and taste for seasoning.
  11. Add the roasted garlic cloves (split up evenly) and Mozzarella cheese. 
  12. Place back into the oven for 5-10 minutes or until the cheese is all bubbly! 
  13. Garnish baked spaghetti squash with parsley and grated parmesan cheese. Enjoy!

  • 2 Whole Spaghetti Squash
  • 20 Roasted Garlic Cloves 
  • 1 Cup Mozzarella (part skim or whole) 
  • Red Pepper Flakes (optional)
  • ¼ Cup Chopped Parsley 
  • 1 Lemon
  • Salt and Pepper to Taste 
  • Olive Oil

Instructions

  1. Preheat the oven to 450 degrees F. (see note 1)

Notes

  1. Before turning on the oven, make sure your racks will allow for the spaghetti squash to fit. You may need to adjust the height and is way easier to do it when it’s cold.
  2. Holes are needed so that the squash can vent.  Otherwise you will have a minor spaghetti squash explosion. 
  3. Some squash are bigger than others and some ovens run at different levels. As a result there will always be a difference in the time that ANY recipe states. It is especially so with the squash because it can indeed come in a multitude of sizes.
  4. You can also add some more veggies or some cut up chicken, ground turkey, beef or chicken and even shrimp! The choices here are endless and adding in some protein creates a perfect meal!
