How to Make Avocado Toast with Poached Egg and Smoked Salmon

Toast the Bread
Toast your bread. You can use your oven or a frying pan with a touch of butter. It takes a bit longer, but it is so much tastier!
Make the Eggs
Prepare your poached eggs.
Prepare the Avocado Spread
While the eggs are cooking, make your avocado spread. Using a knife, cut the avocado in half and spoon it out into a plate. A plate makes it easier because it gives you a flat surface to smash down the avocado, but you can use a small bowl if you prefer. If you have it handy, using a mortar and pestle is one of my favorite and easiest ways to make guacamole or smashed avocado. Once the avocado is smashed to the desired consistency, add a pinch of salt and pepper, red pepper flakes (optional), and a squeeze of half the lemon. Combine and taste.
Assemble the Toast
Start assembling your toasts. Smear the avocado smash or place the avocado slices on the toasted bread. Layer on the smoked salmon, then sprinkle on the baby arugula. Finally, drizzle on some olive oil, salt, and a bit more lemon juice.
Serve
Carefully place your poached egg on top of the smoked salmon. Season with salt and pepper and red pepper flakes if you feel feisty. Break the egg yolk and enjoy! Warning! You will need lots of napkins, a knife, and a fork for this glorious salmon avocado toast!

Notes
- When choosing the ultimately ripe avocado, give it a light squeeze. It should be firm but bounce back a little. Another great way to tell is to take off the little top stem and look at the color! If it is the perfect buttery green color, then you are off to a great start!
- You can use traditional cold smoked salmon, or hot smoked salmon works wonderfully as well! I also really love smoked trout on there!
