Super Cheesy Breakfast Potatoes…A Hangover Cure
The ultimate hangover cure in our household are my super cheesy breakfast potatoes!!! Thinly sliced potatoes with savory onions topped with gooey and salty cheese and you can say: bye bye hangover!
Aghhh the dreaded hangover. We got used to them in our 20’s after late nights at the dance clubs and went to our ultimate cure-all greasy diners at 4 or 6 in the morning…depending on how big of a party animal you were.
Those hangovers were cured by greasy food and sleeping late into the next day. That being said…hangovers in your 30’s with a toddler…are not so fun.
So on those nights when we are out drinking late or drinking too much for that matter and my rambunctious munchkin wakes me up at 7 am… my splitting headache is completely unimportant to her as she yells, “Mama mama!” And hits me on the head with several random stuffed animals.
Clearly my wine induced migraine is of no concern to her.
And in an attempt to cure my migraine, I decided I needed comfort food…stat. For me thinly sliced and cheesy breakfast potatoes are the best. They are crispy, tender and extra cheesy.
And fortunately, both me and the munchkin are fans of potatoes on a cranky Saturday morning. We both noshed on these potatoes and some perfect eggs hungrily and stared off into another riveting episode of “Doc McStuffins”.
I was entranced as Doc McStuffins healed a knight toy who was petrified of the dark when I felt something hit my face. I turned to the munchkin and she was giggling happily as the piece of potato that she threw at my face slid off and went “splat” on the floor. And so followed her bowl of unfinished potatoes. Time to carry on with the munchkin entertaining. Off we go to play with our many toys.

And suddenly I realized I wasn’t nearly as cranky anymore and my head was not throbbing as much anymore. My hangover was on its way out the door.
And as a familiar smell permeated my nose…I was on my way to take care of diaper dooty…
But first let’s learn a recipe.
Wash two large potatoes. You can use any potatoes you like, I happened to have some nice bakers laying around so that was what I used. Slice thinly with a knife or a manadaline slicer. Just watch those fingers on the it! Those things are SHARP!
Slice 1 large onion thinly.
Pour about 2 tablespoons of oil into a frying pan and place over medium high heat.
Add your potatoes into the pan and allow to sizzle, sizzle. Let cook on one side UNDISTURBED. That’s how you will get that gorgeous crusty, crispiness. And DO NOT cover with a lid…you will end up steaming the potatoes. Allow to cook for about 10 minutes undisturbed on medium heat before flipping. After flipping, go ahead and add in the onions.
In the meantime, shred some nice Cheddar cheese. Or any other cheese your heart desires. I had a gorgeous white cheddar in the fridge so that’s what I used. You will need about 1/2 cup or so.
While you are going crazy with the microplaner...go ahead and grate 3 cloves of garlic on it as well and add the garlic to the potatoes.
Add the garlic to the potatoes and COVER with a lid. This will make sure the potatoes get tender and still caramelized on the outside…which for me is pure perfection.
Once the potatoes are done and tender, taste and season with sale and pepper.
Remove from heat, place on a plate and sprinkle with cheese and chives.

I hear you!!! I am getting worse and worse with hangovers….if I have a hangover, it completely wipes out my entire next day. As in, I have to PLAN to have a hangover and make sure I have nothing on. It is so depressing. I want my stamina back!

I hate hangovers in my 40s too! The only thing that cures it is Vitamin G (grease) and some carbs. These hangover potatoes are easy and certain to cure my hangover so I can party again the next day! Thanks Mila!
