This super healthy Balsamic Roasted Vegetable Quinoa Bowl is loaded with good for you veggies, wholesome White & Red Quinoa and a delicious and tangy balsamic glaze. Lunch will never be a boring salad again!
Ingredients

- 2 cup roasted or grilled cauliflower
- 1 cup roasted or grilled zucchini
- 1 cup roasted or grilled red and green pepper
- 1 cup roasted or grilled red onion
- 1 whole avocado (sliced)
- 1 container Minute Ready Red and White Quinoa (cooked according to package insructions)
- 1 cup baby spinach
- 2 tbsp fresh basil chopped
- 2 tbsp balsamic glaze (plus more if desired)
- salt and pepper (to taste)
- lemon wedges (optional)
Instructions
- Combine all the ingredients in a bowl and drizzle with the balsamic glaze as necessary. Add in lemon if desired.
