The summer months always leave me with minimal desire to spend time in the kitchen cooking and instead make me want take my meals outside and grill everything up to juicy and tasty perfection without ever lighting up my oven or my stove.

This has been massively successful for the past month as I have forced myself to pre marinade all my meats and veggies on the weekends so that I can get dinners on the table in sheer minutes thanks to my mighty and powerful grill.  And because of my consistent dining success, I have been able to keep my fridge stocked with tons of veggies and proteins that make dinner and lunches for the hubby an absolute breeze.

Despite my very diligent prep work, the end of the week for us and for so many other families out there is a tad of a challenge.  Typically all my proteins are gone and I am left with some straggling grilled veggies and other random mismatched herbs.  I like to keep a super full pantry just in case I run into a day like this.  I always have plenty of rice, pasta, canned beans, lentils and my newest obsession this Minute® Ready to Serve White & Red Quinoa.

On the occasion that I do not have a cooked rice or grain ready to go in the fridge this Minute Ready to Serve White & Red Quinoa comes in handy because it is ready in only 60 seconds!!! So on those insane mornings when I am begging the munchkin to brush her teeth while simultaneously packing hubby’s lunches for the day, this Minute Ready to Serve White & Red Quinoa is ideal because all I do is pop it into the microwave for 60 seconds and I have an awesome wholesome and delicious side to go along with the hub’s grilled meats and veggies!  Best of all since I really try and watch his portion sizes because he is trying to lose some pounds, this is massive portion control because I know exactly how much is in this cup of the Minute Ready to Serve White & Red Quinoa.

Just last Friday, I was running around the kitchen with my messy bun and my pj’s when I realized, I have no protein to give the hubs in his salad.  After a slew of profanities escaped my mouth as I rummaged through the pantry, a little smile crept up on my face as I saw my saving grace: Minute Ready to Serve White & Red Quinoa.  The magical grain quinoa is not only delicious and full of fiber but it is also a perfect protein: it is one of the few plant proteins that actually has all 9 essential amino acids. (There is my food and nutrition nerd coming out.)The best part is there is no prep involved with this Minute Ready to Serve White & Red Quinoa because it’s already cooked!

I plopped it into his lunch container and added in some fresh baby spinach, freshly chopped basil, some grilled red onions, red and green peppers, zucchini and grilled cauliflower.  Instead of covering this gorgeousness in a lack luster dressing, I used some balsamic glaze that I had hiding away in my pantry on top to give it a tangy and sweet finish.  I then packed it up for the hubby, planted a good bye kiss on him and went upstairs to negotiate with the munchkin over which dress she would wear to daycare that day.

I later received a thumbs up from the hubby in text format, approving my brilliant new creation of roasted and grilled veggies over this glorious Minute Ready to Serve White & Red Quinoa.  He did not even call it “rabbit food” as he so frequently does when I decide to leave out the meat of his meals.

Major success achieved!

THE TECHNIQUE AND OTHER OPTIONS

  1. Roasting or Grilling Veggies:  In the summer months I love to use the grilled veggies because they are always readily available in my fridge.  However, in the winter months I use roasted veggies and the quinoa bowl is just as yummy!  I alway
    s marinade my veggies ahead of time and in my favorite marinade and then they pack and even bigger flavor punch!  A deliciously simple and savory steak marinade that takes an ordinary steak to a gorgeously tender and scrumptious piece of meat. As a bonus it is great on veggies!

2.  Other Flavors and Ingredients: What I particularly love about this Minute Ready to Serve White & Red Quinoa is the sheer versatility of it.  You can do the exact same recipe, add in some Parmesan and Mozzarella cheese, heat it up and have a deliciously warm and hearty meal.  You can also remove the balsamic glaze, add in some scallions, cilantro, sesame oil and soy sauce and have a fabulous Thai inspired quinoa bowl.  Truly the options here are limitless and the flavor combos always delicious!!! If roasting the veggies, you can roast them ALL on one pan and have plenty of uses for the week!!!

Ingredients

Scale
  • 2 cup roasted or grilled cauliflower
  • 1 cup roasted or grilled zucchini
  • 1 cup roasted or grilled red and green pepper
  • 1 cup roasted or grilled red onion
  • 1 whole avocado (sliced)
  • 1 container Minute Ready Red and White Quinoa (cooked according to package insructions)
  • 1 cup baby spinach
  • 2 tbsp fresh basil chopped
  • 2 tbsp balsamic glaze (plus more if desired)
  • salt and pepper (to taste)
  • lemon wedges (optional)

Instructions

  1. Combine all the ingredients in a bowl and drizzle with the balsamic glaze as necessary.  Add in lemon if desired.
