  • 2 cup roasted or grilled cauliflower
  • 1 cup roasted or grilled zucchini
  • 1 cup roasted or grilled red and green pepper
  • 1 cup roasted or grilled red onion
  • 1 whole avocado sliced
  • 1 container Minute Ready Red and White Quinoa cooked according to package insructions
  • 1 cup baby spinach
  • 2 tbsp fresh basil chopped
  • 2 tbsp balsamic glaze plus more if desired
  • salt and pepper to taste
  • lemon wedges optional


  1. Combine all the ingredients in a bowl and drizzle with the balsamic glaze as necessary.  Add in lemon if desired.
