Strawberry Shortcake Stuffed French Toast

Ā Ā A deliciousĀ twist on the classic French toast breakfast favorite! Full of juicy strawberries and sweet cream cheese this stuffed French toast is perfect for an elegant brunch or a fun breakfast at home!

Sometimes on on an occasional weekend, when the house is quiet and I’m amped up on my triple cappuccino, I get brilliantly crazy ideas. Ā Those crazy ideas are fueled by images from Pinterest that have branded themselves on my eye balls. Ā Typically golden eggs with beautiful runny centers and crispy bacon flanking them is the most impressionable to me and frankly the most appetizing. Ā But sometimes I just cannot help but feel left out of theĀ oozey, gooey, streaks of caramel that some Pinners tend to devour as part of their complete breakfast.

Staring into my fridge that gloomy morning, I was tired of depressigĀ and cloudy days. Ā I needed something bright and cheery. Ā Flavors and colors reminiscent of our usual summers with warmer days and tanner complexions.

ANYHOW…

I saw some strawberries that were surprisingly looking good , despite the fact that I had ignored their existence in my fridge the past week. Ā And a leftover loaf of Hawaiian bread from a catering function I had the day before. Ā Hawaiian Bread + Strawberries=AWESOME.

What kind of awesome? Ā FRENCH TOAST AWESOME. Ā As I mentioned in myĀ other French Toast recipe… Hawaiian Bread is kind of amazing in French toast.

As I pondered over contenders for my sinful breakfast in front of the cool fridge, I heard the beckoning of the munchkin from upstairs and I knew my enticing breakfast was going to have to wait.

After a quick diaper change and a hug good morning to every single differently sized Minnie and Mickey in her room, I was given permission to make my descent downstairs…only if I carried her down like the little princess that she is.

We made our way into the kitchen and she started jumping up and down when she looked at the stove…I was so thrilled that she thought my breakfast creation was pleasing her…but she was looking right past my creation and started grabbing at the Play-Doh that I hide behind my cookbooks. Ā  I placed her in her high chair and she proceeded to copy everything I did, using pretend bread and tiny red Play-Doh “strawberries” she made herself. Ā She even made me a heart out of the cookie cutters I gave her…

Having had the munchkin distracted, I proceeded to assemble my French toasts.

First I placed some milk, eggs and cinnamon in a bowl. Ā Whisk, whisk, whisk.

And then I added in my SECRET ingredient…fresh orange zest. Ā Something about oranges and strawberries always seems to liven things up and make it all fresh and gourmet tasting.

Then I smeared some cream cheese on all of the slices of bread.

Then I piled on some strawberries on one of each half of toast. Ā And I put them together.

Place a tablespoon or two of butter in a pan over medium heat. Ā Let it melt.

Carefully dip the bread into the egg and milk mixture.

And place it on the pan and let it fry nice and slow until it is brown and bubbly.

Remove and let cool for 2 minutes. Ā Cut. Ā Serve with fresh strawberries, powdered sugar and whipped cream if your heart desires.

Strawberry Shortcake French Toast

Ingredients

Scale
  • 8 slices of King’s Hawaiian Bread
  • 10 strawberries thinly sliced
  • 1/4 cup of cream cheese
  • 4 eggs
  • Ā½ a cup of milk
  • zest of 1 orange
  • Ā¼ tsp cinnamon
  • 2 tbsp plus more if necessary butter for frying
  • powdered sugar

Instructions

  1. Pour some milk, eggs, orange zest and cinnamon in a bowl and whisk it all up until combined.
  2. Smear cream cheese onto all pieces of bread.
  3. Place strawberries on half of the pieces of bread.
  4. Put both pieces together and form a sandwich.
  5. Place a tablespoon or two of butter in a pan over medium heat. Let it melt.
  6. Carefully dip the bread into the egg and milk mixture.
  7. And place it on the pan and let it fry nice and slow until it is brown and bubbly, about 3-4 minutes, then turn over. Again, carefully.
  8. Remove and let cool for 2 minutes. Cut. Serve with fresh strawberries, powdered sugar and whipped cream if your heart desires.

    1. Thank you šŸ™‚ Yes I made this once without the orange zest and it did not taste as well as it did with the zest. The zest definitely gives it that “hmmmm what’s in there” vibe!

  2. I love french toast and this is nothing short of delicious! šŸ™‚ I’ve actually never had Hawaiian Bread!! I need to look for them and try making French toast with it… definitely add some creamcheese and Strawberries too (would Chocolate be too OTT?)

    1. Hawaiian bread is AWESOME! I use it quite a bit on the site šŸ™‚ chocolate maybe over kill…but if you drizzle some white chocolate on top that may do the trick!
