In the last days of August the hubs and I decided to escape to Miami for my birthday. Β You see, I love my birthday…I really do. Β But as usual I had procrastinated and had not planned anything and it was starting to give me anxiety. Β So I ran away from the planning and landed straight onto the beach.

Our friends happened to have a condo there, on the 21st floor, with a huge balcony and a prime ocean front view. Β It was an easy decision to make. Β Our other friends were already there waiting for us. Β It was my first time in Miami and I was eager to experience the beautiful water and the sexy Latin vibe. Β Miami was my kind of town. Β Sexy, warm and incredibly beautiful. Β  I could get used to this.

We met with some of our other friends who moved there a few years back, jet skied and had incredible ocean front dinners at local dives reminiscing our clubhead days to the sound of the soothing ocean. Β And most importantly I got to celebrate my birthday in the best way I knew how: Β Drinks at midnight in the middle of South Beach in an adorable outfit as the music pumped around us.

The wait staff and my friends sang “Happy Birthday” and I blew out my candles and prayed that this night never ended. Β But it did and the next day was even better. Β My birthday was spent on the beach, with a bottle of champagne, some incredible sushi, good friends and a number of Facetime calls from friends telling me how much they envied my beach time. Β Life was good.

One of our nights in Miami we went to an awesome local restaurant in Ft. Lauderdale called Coconuts. Β It was super casual yet decorated with gorgeous yachts and Ferarris. Β All the guests hung out by the outdoor bars, shooting oysters and sipping wine and beer. Β It had a waterfrontΒ outside patio overlooking the marina and the smells of sizzling garlic could be smelled from a mile away. Β Our friends were running super late and hubs and I were starving so we grabbed a seat at the overflowing bar and ordered a few apps.

Hubs ordered an appetizer called scoobbies. Β I had the watermelon and mint salad. Β My salad really was fantastic: simple fresh and sweet flavors combined with arugula and citrus notes made this girl quite happy. Β But the scoobbies were fantastic. Β Scoobies were little crab pinchers that sat in a simple garlic butter sauce. Β But it was oh so delicious. Β Even I had to cheat on my plant based life and dip some of the crostini into that golden butter.

Several week after Miami, on a rather chilly night, hubs says to me, “I want some of those Miami scoobies that we had. Β Can you make that?”

Well I was fresh out of crab pinchers but I did have some shrimp in the freezer. Β And this golden butter sauce was waiting for them.

Some chili flakes, garlic and scallions were thrown into a warm pool of butter and olive oil. Β I made some easy crostiniΒ on my panini grill instead of the usual broiler and they were a perfect mode to transport the buttery sauce into his mouth. Β And that was how garlic shrimp were born.

“Good stuff babe. Β It tastes just as good as Miami.”

His belly was full, my heart was happy and my dishes were clean. Β A night well done.

Easy Spicy Garlic Shrimp

These spicy garlic shrimp are emerged in a golden white wine sauce. A perfect dish for a fast meal that serves up as gourmet as any restaurant dish.


Ingredients

Scale
  • 1 pound of shrimp (peeled and de-veined)
  • 4 tbsp butter
  • 4 tbsp olive oil
  • 1/2 a cup white wine
  • 1 tbsp lemon juice
  • 4 cloves of garlic (minced on a microplaner)
  • 1 shallot finely diced
  • 3 scallions (sliced thinly)
  • a healthy pinch of red chili flakes
  • salt and pepper to taste
  • 1 order ofcrostini

Instructions

  1. Heat a sautee pan to medium high heat.
  2. Add butter and olive oil and allow to melt.
  3. Add shrimp and sautee for one minute.
  4. Increase heat to high.
  5. Add garlic, shallots, chili flakes, lemon juice and white wine. Season with salt and pepper
  6. Flip the shrimp and allow the mixture to come to a boil so the alcohol can boil out. Cook for 2 more minutes.
  7. Taste for seasoning. Add scallions. Toss and Serve immediately.

Notes

Note 1: Shrimp take about 3-5 minutes to cook. Not over cooking them is CRUCIAL! As soon as they turn pink on one side, flip them, the next side will take about half as long.

  1. Oooh, those ocean front restaurants! I’m swooning! I’m also swooning at the shrimp (we would call those king prawns over here!) Who needs the crab tails to replicate that beautiful buttery taste? πŸ™‚

    1. Ahhh Helen the ocean front restaurants were EVERYTHING!!! And absolutely agree you guys do call them prawns and I love that! It makes me feel all fancy and British when I say that πŸ™‚

    So it looks like we both had shrimp on the mind this week. My hubby is out of town, but one of his favorite dishes is garlic shrimp, the garlicier, the better. He’s going to LOVE this.

  3. Shrimp is my all time favourite food, Mila and I love a dish like this that accentuates it’s naturally good flavour and celebrates it’s uniqueness.

  5. Another winner, Mila! Thanks for reposting this, via the butter poached lobster recipe, on FB to bring it to my attention. I’m always looking for new shrimp recipes and have plenty of shrimp in the freezer. Garlic, scallions, butter–Mr. Fussy will be in heaven!

      1. Took me a while, Mila, but I made this tonight and it was great. The shrimp were so tender! I made a half recipe but cut back the oil and butter even more, and it still made plenty of sauce. Once I had everything prepped, it come together in a flash! Served it over wild rice–yum!
