Chicken and Rice Soup

 A classic soup brightened up with some fresh flavors and colors!  Perfect to beat those ailing colds and sniffles.

I have been a bad blogger.  I have neglected my blogger responsibilities to keep my loyal readers happy with new recipes.  But I have an excuse.  A good one… This blogger is sick.

And I say IS sick because at the present time after 4 days of incessant sneezing, wheezing and moaning, I am still sick.

With my luck…I think it has manifested itself nicely into a sinus infection.  Fantastic.

Summer colds are the worst.  You shiver from the chills and body aches and are laying under a warm blanky while the beautiful sunshine peeks in through all your windows taunting you with all its awesome glory.  F You sun.

As my dishes piled on in the sink and my fridge emptied out, I decided to forgo this whole eating thing and instead focus on the nap that was coming over me due to the so-called non drowsy Tylenol Cold (liars) I had consumed 30 minutes earlier.

My feverish dreams brought me no peace and I found myself suddenly awake with my over-sized and sweat soaked blanket stuck to me.  I peeled off my blanket, rubbed my sleep encrusted eyes and stared mindlessly into the TV, still trying to recover from the medicine head the so-called non-drowsy Tylenol put me into. (liars)

And then a commercial of warm, comforting soup came on.  For the first time in days I had an appetite.  And my appetite ached for a big bowl of homemade soup.

It took all my energy to mosey my way into the kitchen.  But I turned on the Cooking Channel for cookspiration and suddenly found it a tad easier to lift up my knife with purpose.

The most important question was…what the hell was I going to use to make this soup?!  My fridge was pretty sad looking at this point.

I found a half eaten rotisserie chicken, some random vegetables, some frozen brown rice and a few quarts of store bought chicken broth.

It’s just what I needed…30 minutes later I had a golden broth rich with chicken flavor and large chunky veggies.  I sipped and slurped the hearty broth and instantly felt renewed.

My sniffles still mocked me and my used tissues remained scattered throughout the living room…but life seemed a little better now with that warm broth coating my belly.  So good in fact, that I decided to use my energy to wash the dishes…and precisely two dishes later I found myself dizzy and exhausted….yea no dish washing for me today…

However, I did pour myself a second helping before I dived into my new favorite obsession “Masters of Sex”.  And as I watched the tale of Masters and Johnson unfold before me…I suddenly felt a little better…and had a new hope that this summer cold was hopefully on its way out.  For good.

And then we are going to slice up some carrots into nice large half moons.

Throw all your veggies into a pot with olive oil heated to medium heat and let them sweat for about 5-10 minutes.  No need for color here so feel free to cover with a lid.  And do season with salt and pepper.  Feel free to add some minced garlic as well.

Pour in about 6 cups of chicken broth into the pot.  Add in a handful of parsley stems.  I just feel like they make all the flavor difference.

While the soup is bubbling away, shred one large cooked chicken breast and add into the pot.  If you have raw chicken breast, feel free to add it into the chicken stock now so that it can cook along with the veggies. Same goes for the rice.  If you have uncooked rice, now would be a good time to add it.

Let the veggies simmer away for about 20 minutes.  Taste for seasoning.  And then I add in one of my secret weapons:  Better than Bouillion.  This is ultimate flavor city!  Add it in 1 tbsp at a time, making sure you mix it well each time until desired flavor is achieved.

Super secret ingredient number 2: Add in 2 tbsp of turmeric powder.  This gives the soup its signature uber yellow color.

Add in your chicken and 1 cup of cooked rice to the broth.  Add in juice of a lemon and taste.

Now pour yourself a hearty bowl of chicken and rice soup and slurp away the hard days!

Ingredients

  • 1 large onion (diced)
  • 2 large carrots (peeled and chopped into half moons)
  • 2 large celery ribs (chopped into half moons)
  • 1 large cooked chicken breast (shredded)
  • 1 cup of cooked brown or white rice
  • a handful of parsley stems and some chopped parsley as a garnish
  • 1 tbsp of Better Than Bouillon
  • 1 tsp ground turmeric

Instructions
