BBQ Chicken Pizza Turnovers

Nothing is better than the classic BBQ Chicken Pizza…well nothing except all those flavors and textures wrapped up in one neat little puff pastry package. Β Cheesy, tangy and crispy, these turnovers are the ultimate appetizer for any party or as a quick snack!

There are moments in my life where I think a recipe has reached ultimate perfection. Β This is one of those moments.

I’m not bragging. Β Honest. Β In fact I am not even very good at making appetizers. Β But this is what appetizer dreams are made of.

On a very cold, dreary and early Sunday morning, I sat next to my onsie clad munchkin on the couch watching a brand new Russian cartoon we were both quite into. Β This seemed to be the only thing keeping my mind off theΒ torrential headache I had from consuming too many glasses of glorious Italian wines the night before.

As I sat glued to the couch thinking about the night behind me full of empty wine and scotch glasses and homemade crispy flat breads, I felt a tiny little hand pulling at me to get my lazy robed arse off the couch.

Munchkin took my hand and led me to the fridge. Β I stumbled on the two stairs along the way and was given a dirty look by the hangry munchkin. Β (hungry+angry). Β I silently pondered if I was still just a bit intoxicated; the hiccup that escaped my mouth confirmed my suspicions.

She forced my hand to grip the handlebar of the fridge and pull to open it. Β She then placed her feet on the bottom of the fridge to give herself a boost and started pointing to all the things she would like to enjoy for breakfast.

“Mama, eta, eta, e eta.” Meaning this, this and this. Β She had somehow managed to pick out some left over shredded bbq chicken, a bottle of BBQ sauce and cilantro.

“Charlie, seriously? Β It’s 7 in the morning. Β How about eggs instead?” I asked her. Β She stared at me, her face not changing. Β Then stomped over to her high chair and demanded I lift her into her leather, yellow throne. Β She sat there and pointed to her little table continuously with a tiny pointer finger, signaling me to get into gear and whip her up a little gourmet breakfast.

What was a hungover mom to do? Β I placed the components that she had picked out into her compartmentalized plate and served it up to her.

“Mmmmmmmm Charlie look how pretty.” Β She stared at the plate of carefully placed chicken pieces, garnished with cilantro and accented by some cherry tomatoes and pushed it away from her turning her face the opposite direction. Β And at her next move, I. Almost. Died.

She said,”Mama, idi.” meaning mama go…and she pointed to the cutting board.

I had a 3 foot terror telling me to go and be more creative than this mess of chicken and veggies.

I started laughing hysterically. Β She smiled, nodded her head and turned back to the cartoons, sippy cup in mouth and patiently awaited for my next trick.

This is who I take my orders from. Β She rules the house with an iron fist.

At that point I realized that the munchkin had given me a gift.. the gift of time. Β It was a rare occasion that she let me run free in my kitchen to create crazy experiments. Β So I took her up on the offer…and what happened next was pretty great.

I decided to use up some frozen puff pastry sheets that I had hidden in the back of my freezer for months. Β And I put all the ingredients munchkin prepared for me to good use. Β I was inspired by my own BBQ chicken pizza recipe from the night before. I decided to take all those ingredients, shove them into puff pastry pockets and bake them off until they were bubbly goodness.

The result was O. MY. GAHHH. Β It was flaky, oozy, sweet, tangy and freaking awesome! Β All those flavors combined into one bite were just…just…well they just left me speechless.

I sat there eating them one by one licking off each flaky crumb that threatened to fall out of my mouth. Β And then the munchkin turned to me and tapped her little finger on her table, beckoning for me to bring her a piece.

She took one bite and was clearly as impressed as I was. Β Her little fingers were all crumby and she had no shame in licking off each fallen crumb as mama had. Β I had pleased the 3 foot terror. Β And by the gigantic smile sweeping her face she was clearly over joyed and firmly placed a wet sloppy kiss on my lips. Β We both licked off the crumbs that lay behind.

Hubs woke up and refused to eat one in fears that he will not be in bikini shape for our upcoming Β vacation. Β However, our 17 year old nephew came over and continued eating them while him and hubs watched the game until there were just a few left.

Worried that I myself would savagely devour these last remaining pockets of love, I wrapped them up and took them to work the next day. Β My 25 year old string bean of a co-worker devoured them all and then asked if I would make him anymore… Perhaps.

We start simply enough by taking frozen sheets of puff pastry (I used Peppridge Farms) and letting them thaw out for about 30 minutes on the counter. Β Then cut them into 9 equal squares. Β Also, preheat oven to 400 degrees.

In the mean time prep your other ingredients. Β I already had shredded chicken. Β But if you don’t you will need one roasted, boiled or rotisserie chicken breast, shredded and tossed with your favorite BBQ sauce. Β I prefer Sweet Baby Rays.

Also get out 1/2 a cup of shredded cheddar, 3 tablespoons of chopped cilantro, and 1/2 of a red onion chopped finely. Β You will also want to have some extra BBQ sauce on hand.

Place the puff pastry squares on a baking sheet fitted with parchment paper. Β Drop a dollop of BBQ sauce into the center of each square. Β  No need to be neat here.

Then sprinkle a bit of cheese on top of the sauce, add shredded chicken, onions, cilantro and finish up with more cheese. Β This way it’s gooey from all ends. Β  Don’t go crazy loading them up though. Β You literally want pinches of each ingredient.

Now, grab a corner with your finger and stretch it a bit. Β Pull it over to the diagonal corner so it forms a cute little triangle.

Press the edges down so they seal. Β Next take a fork and press down on the edges so you create a cute little design and you also seal it extra well this way.

It’s ok if some of the ingredients get smushed into the edges. Β It gives them character.

Take one egg and a tbsp of water and mix it up with a fork, creating an egg wash. Β With a pastry brush or your finger dab the egg wash all over the turnovers.

Sprinkle some more cheese on top. Β This will create a really yummy salty crust on top.

Bake until golden brown or about 18-20 minutes. Β Depending on your oven. Β I use a convection oven so mine goes a bit faster.

Do yourself a favor….let them cool down a bit more than I had. Β I had burns all over my mouth from these little suckers. Β  Β MMMM beautiful smudge marks.

Garnish them with some cilantro.

Ingredients

  5. I wish I had these when I had my wine hangover. White wine always gets me! But red wine makes me forget things… Maybe that is a good thing. If I could get it to erase everyone else’s memory of what I did would be even better. Maybe I can distract them with these pizza turnovers!
