This Christmas Bark looks like winter wonderland perfection.  I used to think bark was some sort of complicated candy that I would need all sorts of complicated equipment for.  But it is beyond simple to make actually and ridiculously delicious.

Last week, munchkin and I woke up to the most beautiful Saturday morning.  Munchkin and I both looked out the window at snow covered branches and flurries falling from the sky.  It was the ideal day for baking with the munchkin and listening to Christmas music.

I know that baking with munchkin must be fast and easy because her attention span still rivals that of a fly.  I had made Christmas bark on my Facebook Live with some fabulous kiddos and I knew this would be perfect for this little munchkin.

I saw a picture of the most gorgeous Christmas bark on the Food Network by none other than the great Ina Garten.  It was a white chocolate bark with nuts and dried fruits that sparkled like gem stones.  I knew that was our calling.

So munchkin and I got to work.  I stayed pretty loyal to the original recipe with the exception of a few things.

The Technique

There is not much to the technique of a bark.  Except that of how to handle chocolate.  Chocolate and particularly white chocolate can be quite finicky if it is not treated properly.

  1. Chocolate needs to be melted slowly. You can do it either by placing a bowl of chocolate over a pot of simmering water so the steam melts it.  Or you can also just melt it in a bowl in 30 second intervals in the microwave.  I decided to do the latter.  After each time that you take it out of the microwave just stir it a little bit.
  2. The addition of coconut oil to chocolate produces a smoother finish as well as a more glossy finish.  A little bit goes a a very long way so use it sparingly.  About 1 tsp per 16oz of chocolate is plenty.

Turns out the munchkin has proven to be quite helpful with my photography.  She stayed right next to me helping me with each photo, sticking her fingers in shots, whether I asked her or not.  But most importantly, the amount of joy I got from making this Christmas Bark with her while the snow fell was priceless.

She laughed and made faces at me, posed for the camera and again stuck her fingers into the chocolate every chance she had.

It was a perfect day.  Incredibly calm and everything snowy days should be.  While the cold snow fell outside we kept it warm inside with oodles of cuddles and laughs.

Later while the Christmas Bark set in the freezer, hubby took the munchkin outside to play and they made a snowman.  They came into the house and I greeted them with a warm bowl of Italian Wedding soup (munchkin’s favorite) and some Christmas Bark for dessert.

It may have not been Christmas just yet…but in our house it was utter perfection.  Cold noses soothed by warm soups and belly laughs.  That is the holidays in our house.

Ingredients

  • 16 ounces good white chocolate (finely chopped)
  • 1 tsp coconut oil
  • 1/4 cup dried cranberries+1 tbsp
  • 1/2 cup whole shelled salted pistachios+1tbsp

Instructions

  1. Place parchment paper into an 8X8 baking pan, making sure that the parchment over hangs two of the sides. This is important because you will be lifting the bark out by grabbing the parchment paper.
  2. Place white chocolate into a microwave safe bowl and melt in 30 second increments. Make sure to stir with a spatula in between so that everything melts evenly.
  3. Once completely melted, add in coconut oil and combine.
  4. Add in 1/4 cup dried cranberries and 1/2 a cup shelled pistachios into the white chocolate and mix to combine..
  5. Pour the white chocolate into the pan lined with parchment paper.
  6. Place the 1 tbsp cranberries and the 1 tbsp pistachios into the white chocolate. This is more for the decorative effect.
  7. Put into the fridge for 30 minutes until set.
  8. Lift the parchment paper out of the baking sheet carefully.
  9. Use a sharp knife or a just crack the bark with your hands.
  10. This will keep for up to two weeks in an airtight container.

Notes

1. You can use any dried fruit or nuts you like. You can also sub out dark chocolate or milk chocolate.
2. These make such incredible gifts guys. Put them in some beautiful little baggies and tie them with a ribbon and hand them out to mailmen, teachers or anyone who just loves chocolate.
